Château Living are very excited to introduce our new team member Chef Raf Staniszewski who brings with him incredible culinary skills and a passion for France and its food.

After an early start scouring the local market and specialty stores, Raf begins preparing a special feast just for you and your group. “I love France because it provides amazing produce” he says from the kitchen of the beautiful French Château Conte de Fée where tonight’s dining experience will be created.
To begin he takes the freshest, locally sourced, seasonal ingredients to prepare a menu designed to awaken your senses with every mouthful. Your taste buds will come alive as Chef Raf creates a magical alchemy with the food you are tasting.
To begin your gastronomic journey Raf is preparing a local specialty from the south west of France, pan seared Foie Gras atop a sweet sweep of carrot puree, drizzled with walnut cherry sauce and garnished with candied walnuts, and figs. To follow for main course, perfectly cooked and softly tender fried veal chops paired with creamy parmesan mash a veal sauce and fragrant parsley oil. Our journey is not over until we have embarked on a dessert discovery with a luxurious rich chocolate fondue, silky vanilla ice cream and to add a beautiful texture, a delicate muscovado and almond crumb. Regionally grown and carefully selected wine will accompany each dish of your culinary experience, or you may choose to add your own selection from your wine tasting experience from one of our bespoke Bordeaux wine tours!
